Ingredients
- 1 medium zucchini, rinsed
- 1 teaspoon extra-virgin olive oil
- 1 red onion, chopped
- 1 clove garlic, finely minced
- 2 teaspoon basil pesto
- 1 tablespoon crème fraiche
- 1 cup fresh peas
- A pinch of sea salt
- A pinch of black pepper
- 1 teaspoon fresh lemon zest
- 1 tablespoon grated Parmesan cheese
Directions
Trim off the ends of the zucchini.
With a grater, grate thin ribbons from the zucchini and place in a large bowl.
Heat olive oil in a skillet over medium heat and then fry in red onions for about 5 minutes or until golden brown. Stir in garlic for about 1 minute and then add in the zucchini noodles.
Cook for about 2 minutes or until tender.
Stir in peas, crème fraiche, and pesto. Season with sea salt and pepper and then remove from heat.
Serve in a serving bowl sprinkled with fresh lemon zest and parmesan cheese.
