Stir-Fried Cabbage & Broccoli with Rice

Ever wonder how something so simple can taste so good? That’s the question on everyone’s lips when they taste Stir-Fried Cabbage and Broccoli with Rice. So delicious your family won’t even miss the meat! So easy to make, you’ll want to serve this meal every week – if not every night!

Cook Time: 20 Minutes

Ingredients
  • 2 tablespoons extra-virgin olive oil
  • 4 red onions, sliced
  • 6 garlic cloves, minced
  • 2 tablespoon fresh ginger, minced
  • 2 cups shredded cabbage
  • 2 cups chopped broccoli
  • 2 tablespoons minced peeled fresh ginger
  • 1 cup brown rice
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons soy sauce
  • Juice of 1 lime
  • 2 scallions, thinly sliced
Directions

Cook rice in a pot of salted boiling water for about 15 minutes or until tender.

Meanwhile, heat olive oil in a nonstick skillet over medium heat; add in onions and sauté for about 5 minutes or until fragrant and caramelized.

Stir in garlic and ginger; cook for 2 minutes, and then add in broccoli and cabbage.

Cook for about 5 minutes. Stir in sea salt, pepper, and soy sauce and cook for 2 minutes or until the liquid is almost absorbed.

Remove from the heat and stir in fresh lime juice and scallions.

Serve Stir-Fried Cabbage & Broccoli with brown rice.
