Ingredients
- 2 tablespoons extra-virgin olive oil
- 4 red onions, sliced
- 6 garlic cloves, minced
- 2 tablespoon fresh ginger, minced
- 2 cups shredded cabbage
- 2 cups chopped broccoli
- 2 tablespoons minced peeled fresh ginger
- 1 cup brown rice
- 1/8 teaspoon sea salt
- 1/8 teaspoon black pepper
- 2 tablespoons soy sauce
- Juice of 1 lime
- 2 scallions, thinly sliced
Directions
Cook rice in a pot of salted boiling water for about 15 minutes or until tender.
Meanwhile, heat olive oil in a nonstick skillet over medium heat; add in onions and sauté for about 5 minutes or until fragrant and caramelized.
Stir in garlic and ginger; cook for 2 minutes, and then add in broccoli and cabbage.
Cook for about 5 minutes. Stir in sea salt, pepper, and soy sauce and cook for 2 minutes or until the liquid is almost absorbed.
Remove from the heat and stir in fresh lime juice and scallions.
Serve over cooked brown rice.
