For the Salad:
- 2 cups kale
- 1 cup sliced cucumber
- 3 tomatoes, diced
- 1 cup pitted olives
- 2 bulb fennel, chopped
- 3 avocados, diced
- 1 cup chopped toasted almonds
- 1 cup chopped toasted cashews
For the Dressing:
- 1 cup tahini
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh orange juice
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
In a blender, blend together all the dressing ingredients until well blended. Set aside.
In a large bowl, combine olives, cucumber, lettuce, tomatoes, fennel, and toasted nuts. Pour over the dressing and toss to coat well.
Divide the Healthy Vegan Salad with Toasted Nuts among serving bowls and top each with diced avocados. Enjoy!
