Ingredients

For the salad:

  • 2 cups diced cherry tomatoes
  • 2 cups lettuce
  • 2 cups chopped kale
  • 1 red bell pepper, diced
  • 2 avocados, diced
  • 1/2 cup chopped parsley
  • 1 cup toasted walnuts
  • 1 tablespoon toasted sesame seeds

For the dressing:

  • 2 teaspoons gluten-free mustard
  • 1 tablespoon freshly grated ginger
  • 1/2 cup fresh lemon juice
  • 1/3 cup grapeseed oil
  • 1 teaspoon liquid stevia
  • 1/4 teaspoon sea salt

Directions

In a blender, blend all the dressing ingredients until well blended; set aside.

In a salad bowl, mix broccoli, cabbage, kale, carrots, and bell pepper; pour the dressing over the salad and toss until well coated.

Add diced avocado, parsley, walnuts, and sesame seed; toss again to coat and serve.
