Ingredients
- 4 (120g each) skinless salmon fillets
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon ground paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- Thinly shaved fennel
- Baby arugula leaves
Avocado-Mango Salsa
- 1/2 red onion, chopped
- 1 cucumber, chopped
- 1 mango, diced
- 1/2 avocado, diced
- 1 long red chili, chopped
- 2 tablespoons lime juice
- 1/2 cup chopped coriander
Directions
In a bowl, mix onion powder, paprika, coriander, cumin, and oil until well combined; add in salmon and turn until well coated; sprinkle with salt and pepper.
Preheat the BBQ grill on medium-high and grill the fish for about 3 minutes per side or until cooked to your liking. Wrap in foil and let sit for at least 5 minutes.
In the meantime, in a bowl mix mango, red onion, cucumber, chili, coriander, and fresh lime juice until well combined.
Divide fennel and arugula on serving plates and top each with the grilled salmon and mango-avocado salsa. Serve right away.
