For starters, there’s the fresh blueberries in the salad. But it’s really the dressing that brings the flavor. Ingredients
For the Salad
- 2 (5-6 oz. each) pre-grilled white fish
- 1 cup baby spinach
- 1 cup chopped Romaine lettuce
- ½ cup avocado, sliced
- ½ cup blueberries
- 2 green onions, sliced
- ½ cup shredded carrot
- 1 large cucumber, chopped
- 1 tablespoon chia seeds
For the Dressing
- 1 clove garlic, minced
- ¼ teaspoon oregano
- 1 tablespoon tahini
- 1 teaspoon honey
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon sesame oil
- 1/8 teaspoon red pepper flakes
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Directions
In a large bowl, combine all salad ingredients, except fish.
In a small bowl, whisk together all dressing ingredients until well blended; pour over the salad and toss until well blended. Top each serving with the grilled white fish and enjoy!
