Tofu Banh Mi

 

Whether you’re eating al fresco or al desko, this Tofu Banh Mi is a delicious way to spice up your meals. Banh Mi is a delicious Vietnamese sandwich, in this case filled with flavorful tofu, fresh vegetables, and herbs. Packed with protein and fiber it’s easy to make, fun to eat, and enough to share!

Ingredients

4 Servings

For Marinated Tofu

  • 14 oz extra-firm tofu, pressed and sliced into 1/2-inch thick pieces
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • 1 tablespoon sesame oil

For Sandwich Assembly

  • 4 French baguettes or sandwich rolls
  • Vegan or regular mayonnaise
  • Hot sauce (optional)
  • Sliced cucumber
  • Thinly sliced carrot
  • Sliced red onion
  • Fresh cilantro leaves
  • Fresh mint leaves
  • Jalapeño slices (optional)
  • Lime wedges (for serving)

Instructions

In a bowl, whisk together soy sauce, rice vinegar, maple syrup or honey, minced garlic, grated ginger, sesame oil, salt, and pepper to make the marinade.

Place the tofu slices in a shallow dish and pour the marinade over them. Make sure the tofu is well coated. Marinate for at least 30 minutes, or overnight for best flavor.

Preheat a grill or grill pan over medium-high heat. Grill the marinated tofu slices for 3-4 minutes on each side, or until golden brown and slightly charred. Remove from heat and set aside.

Slice the baguettes or sandwich rolls in half lengthwise. Spread a layer of mayonnaise on the bottom half of each baguette. Optionally, drizzle with Sriracha sauce for added heat.

Layer the grilled tofu slices on top of the mayonnaise.

Arrange cucumber slices, carrot slices, red onion slices, cilantro leaves, mint leaves, and jalapeño slices on top of the tofu.

Squeeze lime juice over the assembled sandwiches.

Place the top half of the baguettes on the sandwiches and enjoy your Tofu Bahn Mi!
