Healthy Citrus & Avocado Salad

Creative and flavorful collide in this dish! While it’s not your typical salad, Healthy Citrus & Avocado Salad might just become your favorite go-to salad. It’s the crunch of the nuts, the freshness of the citrus, and the creamy avocado that make this salad hard to resist. The Citrus Vinaigrette dressing is so good we’re sure you won’t have any trouble finding other uses for this lively and unique dressing.

Ingredients:

  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 2 ripe avocados, sliced
  • 2 cups sliced cucumber
  • 2 tomatoes
  • 4 cups chopped lettuce
  • 1/3 cup toasted walnuts, chopped
  • 1/3 cup toasted almonds, chopped
  • 1/3 cup toasted pistachios, chopped
  • Mint leaves for garnish

Citrus Vinaigrette:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon fresh grapefruit juice
  • 1 tablespoon raw honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Directions

Carefully peel the oranges and grapefruit, removing the outer membrane. Segment the citrus fruits by cutting between the membranes to release the juicy segments into a bowl. Set aside.

Cut the avocados in half, remove the pit, and slice them into thin wedges.

In a large salad bowl, combine the lettuce, cucumber, tomatoes, citrus segments, avocado slices, and chopped nuts.

In a small bowl, whisk together the olive oil, fresh orange juice, grapefruit juice, raw honey, Dijon mustard, salt, and pepper until well combined.

Drizzle the citrus vinaigrette over the salad ingredients. Gently toss the salad to ensure even coating.

Garnish the salad with fresh mint leaves for added brightness and freshness.
