Healthy Beef Chili Served with Avocado

Chili is a cold weather favorite. But it isn’t always considered to be healthy. This Healthy Beef Chili Served with Avocado adds enough vegetables into the mix to make the dish tasty, hearty, and super comforting when it’s cold outside! This is one guilty pleasure – minus the guilt. Remember, using organic or biodynamic ingredients makes this dish – and all your meals –  even healthier and tastier.

Ingredients

  • 2 lb. ground beef
  • 3 slices bacon, cut into thin strips
  • ¼ yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 1/2 cup sliced baby Bella mushrooms
  • 2 tbsp. smoked paprika
  • 2 tsp. dried oregano
  • 2 tsp. ground cumin
  • 2 tbsp. chili powder
  • 2 cup low-sodium beef broth
  • 2 avocados, sliced avocado
  • 2 cups sliced green onions
  • 1 cup shredded cheddar
  • 1 cup sour cream
  • A pinch of salt
  • A pinch of pepper

Directions

Cook bacon in a pot over medium heat until bacon is crisp; remove bacon from the pot and add onion, mushrooms, celery, and pepper. Cook for about 6 minutes and then stir in garlic for about 1 minute. Push the veggies on the side and add in the beef. Cook until it is no longer pink. Next, stir in paprika, oregano, cumin, chili powder, salt, and pepper. Cook for about 2minutes and then stir in broth; simmer for about 15 minutes or until the liquid is evaporated.

Ladle the chili into serving bowls and top each serving with reserved bacon, cheese, sour cream avocado, and green onions.
