Today tortillas are the most popular ethnic bread form on the planet. However, legend has it that the tortilla dates back over 12,000 years to the Mayan empire. The first tortilla was a gift, given by a peasant to his hungry king. While today tortillas are made out of wheat flour and other grains, corn remains the original.

Ingredients
- 8 (6-ounce each) corn tortillas
- 2 avocados, diced
- 2 tablespoons tahini
- 1 red onion, chopped
- 1/2 cup fresh lime juice
- 1 cup cherry tomatoes, chopped
- 1/4 teaspoon ground chipotle pepper
- 1/2 teaspoon sea salt
Directions
Brush corn tortillas with extra-virgin olive oil and grill for about 3 minutes per side or until lightly browned and crisp.
In a food processor, process tahini, lime juice, tomatoes, chipotle pepper, and sea salt until well blended.
In a large bowl, mash together avocado, tahini, chopped red onion, tomatoes, fresh lime juice, chipotle pepper, and sea salt until smooth and well blended.
Spread the avocado mixture over the grilled tortillas and roll to form wraps.
These grilled corn tortillas with avocado and lime spread can be enjoyed with just about any grilled dish, or on their own as a snack or light meal. Enjoy!
