Ingredients
Chilled Peanut Sauce
· 1/3 cup creamy peanut butter
· 1 teaspoon white vinegar
· 1 teaspoon fresh lime juice
· 1 teaspoon extra-virgin olive oil
· 1 clove garlic, minced
· 1 red pepper flakes
· 1 teaspoon liquid stevia
Salad
· 1 red bell pepper
· 1 red onion
· 1 cucumber
· 1 tomato
· 1 avocado
· 1 cup chopped lettuce
· Salt & pepper
Directions
In a small bowl, whisk together all sauce ingredients until well blended; cover and refrigerate until ready to serve.
Combine all salad ingredients in a bowl; drizzle with sauce and serve topped with cilantro.
