Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 cup chopped red onion
- 4 cups sliced mushrooms
- 6 garlic cloves, minced
- 1/2 teaspoon fennel seeds
- 1/8 teaspoon sea salt
- 1/8 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 4 cups tomato sauce
- 2 cups chopped tomatoes
- 1 pound whole-wheat pasta
Directions
Heat olive oil in a skillet over medium heat and sauté in chopped red onions for about 4 minutes or until fragrant and golden browned; stir in mushrooms and sauté for 5 minutes or until lightly browned. Stir in garlic and cook for about 1 minute or until fragrant.
Add in fennels seeds, cayenne, thyme, oregano, basil, tomato sauce, and tomato, and simmer for about 30 minutes.
