Zucchini Lasagna

 

Lasagna is a beloved dish around the world. However, does Italy deserve all the credit? Actually, the name comes from a fermented noodle called laganon that was frequently used in ancient Greece…the country credited with originally creating lasagna. However, that early version was brought to Italy by the Romans, resulting in the dish we love today! Ingredients

2 large zucchinis, thinly sliced lengthwise

1 cup marinara sauce

1 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Olive oil for greasing

Instructions

Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil and set aside.

In a mixing bowl, combine the ricotta cheese, Parmesan cheese, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well. Then, add the egg and mix until combined. Set aside.

Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.

Arrange a layer of thinly sliced zucchini over the marinara sauce, covering the bottom of the dish.

Spoon half of the ricotta mixture over the zucchini layer and spread it evenly with a spatula.

Sprinkle half of the shredded mozzarella cheese over the ricotta layer.

Repeat the layers: marinara sauce, zucchini slices, remaining ricotta mixture, and remaining shredded mozzarella cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

After 30 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Once baked, remove the lasagna from the oven and let it cool for a few minutes before slicing and serving.

Garnish with fresh basil or parsley, if desired. Serve hot and enjoy your delicious Zucchini Lasagna!
