Grilled Summer Squash

Grilled summer squash is a great summer side dish.  But did you know it’s actually a fruit since it flowers and contains seeds? Referred to as one of the Three Sisters (beans, corns, and squash) by American Indian tribes, squash has been an American staple for centuries. Originating from Mexico and parts of Central America, ten thousand year old summer squash seeds have been found in Mexican caves! This beloved fruit spread around the globe when explorers like Christopher Columbus brought it back to their homelands from North America.

Whether you prefer yellow or green summer squash, be sure not to peel them – most of the nutrition is found in the peel!

Yield: 4 Servings

Total Time:  25 Minutes

Prep Time: 15 Minutes

Cook Time: 10 Minutes

Ingredients

  • 1½ pound summer squash, sliced
  • 1 red onion, sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 4 tablespoons fresh lemon juice
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint leaves

Directions

Set up your outdoor grill and preheat to medium high until hot. Clean it and spray with cooking oil spray.

In a large bowl, toss together sliced squash, red onion, olive oil, sea salt, and black pepper. Grill for about 5 minutes per side or until cooked through. Toss with fresh lemon juice, parsley, mint, and more olive oil. Enjoy grilled summer squash hot or cold!
