Ingredients
- 1/2 cup raw cashews, soaked at least 2 hours
- 2 tablespoons tahini
- 4 tablespoons fresh lemon juice
- 1/4 teaspoon smoked paprika
- 1 cup pureed tomato
- 1/4 teaspoon nutmeg
- 2 garlic cloves
- 1/3 cup filtered water
- 1/4 teaspoon sea salt
- 1/4 teaspoon pepper
- 4 medium zucchinis
Directions
Drain and rinse the soaked cashew nuts and then transfer to a blender along with the remaining ingredients except the zucchinis.
Blend until very smooth and creamy.
Rinse the zucchinis and spirals into thin long ribbons.
Add to a large bowl and pour the cashew sauce over; toss to coat well and sprinkle with chopped herbs and chili flakes. Serve right away.
