Ingredients
- 2 tablespoons coconut oil
- 1/2 cup unsweetened almond milk
- ½ cup tapioca flour
- ½ cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon chili powder
- ¼ teaspoon black pepper
- ¼ cup fresh lemon juice
- 1 tablespoon fresh lemon zest
Directions
In a bowl, combine tapioca flour, almond flour, and baking powder; stir in fresh lemon zest, salt, and pepper until well combined. Whisk in the almond milk, and fresh lemon juice to form a smooth batter. Melt coconut oil in a saucepan over medium-low heat; add about ¼ cup of batter and spread out on the pan.
Cook for about 4 minutes per side or until golden brown.
Transfer to a plate and keep warm; repeat with the remaining batter and oil.
Serve the pancakes with freshly squeezed orange juice.
