It wasn’t until the early 1800s that peanuts became an American commercial crop. Today, Americans eat more than 6 pounds of peanuts per year on average, about half of that in the form of peanut butter. Why not? Peanuts are loaded with nutrition, packed with protein, and help with everything from heart health to cancer prevention. That’s nuts!

Ingredients
- 2 cups raw peanuts, unsalted
- 2 teaspoon sea salt
- 2 tablespoon freshly squeezed lemon juice
- 1 teaspoon chili powder
- 1 teaspoon fresh lemon zest
Directions
Preheat oven to 350°F.
In a large bowl, toss together peanuts, lemon juice, chili powder, lemon zest, and sea salt until well coated.
Transfer to a rimmed baking sheet and roast in the oven for about 15 minutes or until fragrant.
Transfer the Roasted Lemon and Chili Peanuts to a bowl and serve.
