Healthy Vegan Salad with Toasted Nuts

Ingredients

For the Salad:

  • 2 cups kale
  • 1 cup sliced cucumber
  • 3 tomatoes, diced
  • 1 cup pitted olives
  • 2 bulb fennel, chopped
  • 3 avocados, diced
  • 1 cup chopped toasted almonds
  • 1 cup chopped toasted cashews

For the Dressing:

Directions
In a blender, blend together all the dressing ingredients until well blended. Set aside.

In a large bowl, combine olives, cucumber, lettuce, tomatoes, fennel, and toasted nuts. Pour over the dressing and toss to coat well.

Divide the salad among serving bowls and top each with diced avocados. Enjoy!
