Middle Eastern Date and Nut Bites

Ingredients

  • 1 cup Medjool dates (pitted)
  • ½ cup raw almonds
  • ½ cup raw walnuts
  • 1 tsp cinnamon
  • ½ tsp cardamom (optional)
  • 1 tbsp unsweetened cocoa powder (optional, for rolling)
  • 2 tbsp shredded coconut (optional, for rolling)

Instructions

If using dried dates, soak them in warm water for 10 minutes, then drain.

Then, in a food processor, combine the dates, almonds, walnuts, cinnamon, and cardamom. Blend until the mixture forms a sticky dough.

Roll the dough into small, bite-sized balls. If you’re having trouble, slightly grease your hands with coconut oil to stop the dough from sticking to your hands.

Roll each ball in cocoa powder or shredded coconut for an extra layer of flavor.

Refrigerate for at least 30 minutes to firm up before serving.
